Lavender Mezcal Sour

Preparation

1. Pour all the ingredients into a shaker
2. Shake once without ice cubes to emulsify the egg white
3. Add ice cubes
4. Shake a second time
5. Double strain into a chilled cup
6. Garnish with a sprig of lavender
7. Serve
